Who said Christmas was all about presents, trees, holly, and mistletoe? Who could forget about Christmas baking recipes?!  That’s right, another much-needed review and list of delicious treats for this winter season. No more Fall, who needs that? I need my hot chocolate, peppermint, and cookies!  How lucky is Santa, getting eating all the cookies on Christmas night… But has he ever tried Peppermint Meltaway Cookies? I would sure hope so, because they would be a big hit with the Big Guy. What are Peppermint Meltaways, you may ask? They’re pretty much heaven on earth - sugar cookies with the lightest peppermint frosting! Mouth watering, right?
    This cookie is one of my very top favorites, a true “meltaway” for my heart! Why is it so good? The cookie dough is incredibly sweet and fluffy and the frosting only adds to it. Want to try out this delicious treat? Well here is the recipe, my fellow baking lovers! This will make 29 small cookies.
    Ingredients for the cookies: 1 1/4 cups all-purpose flour, 1/2 cup cornstarch, 1/4 tsp salt, 1 cup unsalted butter (softened), 1/2 cup powdered sugar, 1/2 tsp peppermint extract. In a mixing bowl whisk together flour, cornstarch, and salt. Set aside.
    In the bowl of an electric stand mixer fitted with the paddle attachment, cream together butter and powdered sugar until combined. Mix in peppermint extract, then with mixer set on low speed, slowly add in flour mixture and mix just until combined. Cover bowl with plastic wrap and chill until nearly firm, about 1 hour, while preheating oven to 350 degrees during last 10 minutes of chilling.
    Scoop dough out one even tablespoon at a time, shape into a ball, then transfer to an ungreased 18 x 13-inch baking sheet, spacing cookies two inches apart (keep dough that won’t be baking chilled.)  Bake in preheated oven until cookies are set and bottoms are lightly golden brown, about 10-13 minutes. Let cool on baking sheet several minutes, then transfer to a wire rack to cool completely
    Ingredients for the frosting: 2 Tbsp salted butter (softened), 2 Tbsp half-and-half,    1/4 tsp peppermint extract, 1 1/2 cups powdered sugar, 1/4    cup finely crushed peppermint bits or candy canes.
      In the bowl of an electric stand mixer, cream together butter, half-and-half, peppermint extract, and powdered sugar until light and fluffy (if frosting is too thick add a little more half-and-half, if it's too thin add a little more powdered sugar). Working with one cookie at a time, spread frosting over the cookie, and immediately after frosting each cookie add crushed peppermint bits before frosting starts to set.  Repeat the process with all cookies. Store cookies in an airtight container at room temperature.
